Lots of natural light
Cannot decide between track lighting, pendant or can. How many? We have a huge window (wall really) that allows for plenty of light. Lighting for rest of the room? Ceiling fan centered? We have a sink on the right (on wall)...not sure on that lighting either.

EB Interiors your window are great, bringing in plenty of day light...but for me who cooks and bakes a ton, you can never have enough light! I like the mix of flourecent and spotlights so you get a bit of both...
I would suggest a small flourecent cloud fixture above the sink area, a bigger chandlier in the center and six-eight small spots split in two rows on either side of the middle fixture. you can have them all on separate switches and use as needed.
