judyjean2012 you already have trim--at top of cabinets and your crown molding! Why not pick up a color you alredy have in kitchen--red canisters? or something you can see in an adjoining area--and try fiding an accessory or two or three--perhaps in an antique store or flea market--and hang one over your sink to see how you like the effect, then gradually add a few others to see how you like the effect. This is a better alternative than removing the soffits and have an impossible place to dust all the time! Is there a color in your flooring you can use--or a bit of fabric valance on you can add to your kitchen window? Good luck.
