Need help with my curtain choice
I am in the process of building a new addition and I am not sure of how to pull off curtains in this room. I wold like to do three finger pleats, but I am not sure if they would be the best solution because of the different heights of window vs. french doors. I would like to be able to have full length curtains that can be energy efficient as well because we do live in a cold winter climate and that is a lot of windows creating energy loss!! Any ideas would be helpful. I will be shopping for fabrics in the next few weeks so that I can sew these and have them ready when my project is complete.

You might be able to "trick" the look of similar window heights by using a layered window covering scheme. I agree with Terri, keep the curtain rods at the same height all around the room. But if you layer curtains with a roman shade, you could create a "false" roman shade above the doors (that always remains open) or hang a real roman shade, outside mount, at the same height as ones hung on the large windows. This won't be ideally functional, and might look weird. You would really need to think about it and maybe draw up a quick mockup to see what it might look like. But it's something to consider.
Otherwise, just keep your fabric choices similar or the same throughout. This photo from the Smith and Noble catalog shows how this approach can look great:
