Need help with our kitchen layout
Our kitchen is old and we will be ripping out everything and replacing (except fridge and wall oven). The left wall is cabinets, fridge and oven and we thought we'd leave this layout as is. Unsure about where to position the sink and stove tops. Currently stovetop in island and sink under far window. The window on the right opens to an indoor pool area and we plan to extend the stone benchtops out this window to make a bar in the pool area and add bifolds. Should we move the sink to this window or perhaps to the island? I've heard you can get a pull-up splashback/exhaust so we could move the stovestops to where the sink is now. Any help/ideas would be great - thanks.

I'd leave the sink where it is. When you open up that right window and make it into a bar, it'll be nice to have an expanse of work surface and serving surface. If you find you really need a sink over there, you could put in a small bar sink off to one side or the other. A full size kitchen sink in that space would be a little awkward.
I'd also leave the cooktop where it is unless you have a reason to move it. Do you have problems working in the current layout? Is it awkward having the cooktop on the island? If you find you need more workspace around the cooktop then I'd consider moving it but it seems like a pretty good layout that just needs updating.
Post pics when you're done! I want to see the bar/pool area.
My kitchen sink looks out over our patio/pool and I have to admit, it's really convenient to reach through the window and dump out a drink, or use the sink. That being said, we don't have a bar ledge, but instead have a counter-height patio table, which seems to work better. Instead of passing food through, and then walking around. I leave it on the counter, walk around, slide open the window, and grab it.
The pass through is for just that, but when we're sitting outside, everyone has their back to the kitchen window and facing the pool, or watching the "Grill Master". Most of the homes around my area have ledges, but I have found that it's more, in the way, than useful, since we have to reach over the ledge and through the window, making the interior counters and sink, harder to access. The pass through window is actually 4' tall sliding doors. The benefit is that the window sil is completely flush, with the counter and pass through area, and both sashes, are moveable.
As for your interior, the only think I might change, depending on what's on the other side, is instead of having the breakfast bar as it is, I would eliminate it and put one large island, with the cook top, that extends all the way to where the breakfast bar is now. The bar stools would wrap around the end, and one side, making for better conversation, as well.

The amount of room on either side of the stove is currently inadequate. To meet NKBA guidelines there should be at least 9” on one side and 15” on the other side of the stove so both for safety and also for convenience.. If you were to change the current configuration of the peninsula and add the island as suggested you would be able to gain the space needed on either side of the island. You could either use overhead ventilation or the downdraft.
You could also do something like the last picture and keep the peninsula but if you did, it would be helpful to put a bar sink nearby
