Give me some do's and don't on undercounter lighting.

Doing a complete make-over of our kitchen. Never have had undercounter lighting and I do want to put that in. But in some photos I look at you can see it, and some looks too harsh. Should I use round single lights, or strips of lights? Are you happy with your undercounter lighting? Do you use it all the time? If put in good downward directed over head lighting will that be enough? Or is this going to be just an expensive 'night light'? (Like some say the microwave is their expensive butter melt-er for their popcorn!), Sorry for all the questions, but I'm just not sure about this part of our project. Need suggestions and things to avoid. Thanks!
